Lemonade Scones

Brrrrrrrr, after waking up to a rather cool morning,, the first thing I thought of was......Lemonade scones! They are such a simple, easy, comfort treat that is great for a morning or afternoon tea. I am devouring one of these yummy scones as I type. Bit messy but I couldn't wait! LOL!!! With only 3 main ingredients it really is so quick to make. My hubby (who can not cook very well!) can make these scones & makes them when his father comes for a visit. They are always a big hit with my chickadees! When Miss G heard that I was going to make them, she was not happy to hear that she would have to wait until after school to have one! They will be a great snack for before hockey training tonight. So here goes.....


Ingredients
3 cups of Self Raising flour
1 cup of cream
1 cup of lemonade (I use diet lemonade but normal can be used)

1/4 cup of water, for brushing tops
castor sugar to sprinkle on top

Preheat oven to 220 degrees celsius
Measure flour into a large bowl. Add cream & lemonade.
Fold together using a flat blade knife or spatula to form a soft dough. Do not over mix.

Place dough on a floured bench & lightly need dough. Flatten with the palm of your hand to 2cm thick.

Cut scone dough with a floured scone cutter or round cookie cutter. Do not twist cutter as you push down or pull out as the scones will not rise properly if you do this. Straight down & out is the rule for high scones.

Place scones close together on a lined baking tray & brush lightly with water. Sprinkle a small amount of castor sugar on each scone.

Bake for 15 minutes (oven times may vary slightly) or until light golden brown on top.

Turn out on to a tea towel, wrap & cool slightly before serving.
To serve, top with your choice of whipped cream, jam or topping of your choice! Here is a picture of my morning tea. I topped mine with whipped cream & a light dusting of icing sugar. Mmmmmmmm, so yummy!!! I may have to have one for lunch as well!!
 Now that my tummy is full & I am feeling quite content, I am going to go & try to get some more work done on Miss G's Hoot Hoot patchwork quit. It seems to be taking me for ever to get this done because I am making it bigger than the standard single bed size. I like the look of a bed when the quilt touches the floor so I am making at extra wide. It also helps to hide all of the storage boxes under her bed! We live in a small but cozy house so we have to use every available space for storage. I will give you a sneak peak. The lighting was not very good last night when i took this photo, it is brighter than in the picture


It will have the darker purple on all for sides of the middle patchwork. I am thinking the same purple would look good for the backing as well! I am thinking that it was also look good as a roman blind with white curtains in front of the blind. It does mean that I am now going to have to paint Miss G's room, AGAIN! I don't think this is going to go well with the lime green paint that she chose last time for her garden room! I am thinking that a light blue would look good with the purple in this quilt
