I have really been enjoying a freezer full of soup this week. It has made lunch times so quick & easy. This one is a fave that I used to make many years ago & it has made a comeback in my house. It is a split pea & vegetable soup that is thick, hearty & very filling. Perfect to fill you up at lunch time or even as a meal for dinner. It is very easy to make. All you need is…
2 shallots
3 medium carrots
2 medium sweet potatoes
500g of pumpkin
1 jar of tomato cooking sauce or 2 tins of diced tomatoes
1 cup of yellow split peas
1L of water or stock
Peel & chop the carrots, sweet potatoes & pumpkin into 1cm pieces so that they are all round the same size. Bite sized.
Slice your shallots into 1cm pieces & fry in a little olive oil until softened
Add the rest of the vegies to the pot with a little more olive oil & fry until slightly softened.
Add the water or stock & the jar of tomatoes or tinned tomatoes & get it to a gentle simmer.
Rinse the split peas well under cold running water.
Add them to the soup & simmer for a further 1 hour or until the vegies are tender & the soup has thickened.
Serve with some fresh French stick or your fave crusty bread.
This freezes well. If you want you could also add some diced beef or chicken to make it a more hearty & filling meal.
